The Little Thistle Cookie Co. started in a way I never would have expected.
The name Little Thistle carries deep personal meaning for me.
Thistle is a nod to my Scottish roots and my maiden name, McLeod.
Little honours my late younger sister, Shayna.
I've always been artistic, but somewhere along the way into adulthood, I lost the outlet for it.
Baking certainly wasn't it - in fact, I HATED baking! Baking was always my younger sister Shayna's thing. After she passed away in early 2025, I inherited her KitchenAid mixer. Not long after, I discovered custom sugar cookies, and something just clicked.
Somehow, something I never expected to love gave me back a creative outlet I didn't realize I was missing. Now, I get to create something special for others, while hounoring Shayna's life and keeping her memory alive in my work.

Each cookie begins with my signature sugar cookie dough, made from scratch for every single order. I bake in small, carefully curated batches, giving each cookie the attention it deserves; from flavour and texture to every hand-decorated details.

My signature sugar cookie recipe combines thoughtfully chosen, quality ingredients (including real vanilla bean paste) to create that soft, delicious bite that The Little Thistle cookies are known for!
Ingredients:
All purpose flour, butter, granulated sugar, icing sugar, water, egg, vanilla bean paste, meringue powder, almond extract, corn syrup, baking powder, cream of tartar, food colouring.
